Have you tried Liberica, one of the world’s three major coffee varieties, along with Robusta and Arabica?

The coffee cherries themselves are large, resulting in larger beans and a stronger aroma. Therefore, it’s best to adjust the grind size and water temperature to achieve under-extraction during brewing.

Alternatively, using a Chemex might be a good option.
